Aubergines grown in poly tunnels in Grampound Road, just outside Truro or at Connor Downs when in season.

At other times grown in the EU and supplied to us by Cornish wholesalers.

Great at soaking up flavours, aubergines work brilliantly in stews, tagines and curries.

Forget the pasta sheets in lasagne and finely slice aubergine for a healthy alternative.
